Ground Beef Cottage Cheese Queso


This ground beef cottage cheese queso dip recipe is cheesy, creamy and protein-packed — we’re talkin’ 20g of protein per serving! All you need is 5 ingredients, and your favorite tortilla chips. It’s time to get dippin’ 😋.

This ground beef queso recipe is ready in just 20 minutes and can easily be doubled or tripled, making it an easy appetizer to serve a crowd. It’s high in protein thanks to the ground beef and cottage cheese, and FULL of flavor. The team gobbled this right up when we made it at the studio this week 🥰

Not all cottage cheese is created equal!

Be sure you are using a THICK cottage cheese before you blend. If your cottage cheese has a higher liquid content (lower fat) before you blend it, you could end up with a very water queso. No one wants that.

We suggest using Good Culture or Kemps and AT LEAST 2% fat instead of low fat or fat free cottage cheese.

Deep Skillet

Use this skillet for your favorite one pot meals or other stove top recipes.

Let the dip cool completely. Then, transfer into a glass container. It will last in the fridge for up to 3-5 days. Reheat over low heat to prevent separation of the cheese and the beef.

  • Heat a large oven-safe skillet over medium heat. Add the ground beef and cook for 2-3 minutes. Add the taco seasoning and stir.

  • Continue to cook the meat until it is fully cooked. Remove the skillet from the heat and add the salsa. Stir to combine and set aside.

  • Prepare the blended cottage cheese. Add the cottage cheese and shredded cheese to a high speed blender or food processor. Process until completely smooth. If the mixture isn’t blending, add 1-2 teaspoons of water to the blender to loosen the mixture.

  • Add the blended mixture to the skillet and stir all of the ingredients together. Top with more shredded cheese.

  • Transfer the skillet to the oven and broil until the cheese on the top becomes melted and brown.

  • Remove from the oven and top with fresh cilantro, avocado, and green onion.

  • Serve immediately with tortilla chips.
